Meatless Monday: Creamy Potato Corn Lentil Soup
It’s that time of year. Time for those delicious warm soups to help warm you up during the chilly fall. Or if you want to enjoy a good soup for meatless Monday try this one! This soup is creamy, and very yummy!
Creamy Potato Corn Lentil Soup
- 1/2 Yellow Onion
- 1 Clove Garlic
- 2 Tablespoons Butter
- 1-1 1/2 Cups of Corn (i used frozen organic corn)
- 3-4 Medium Potatos
- 1 Cup Lentils
- 4 Cups Vegetable Broth (or organic free range chicken broth)
- 6 Cups Water
- 1-2 teaspoons marjoram
- 1 1/2 Cups Raw Cream (i used sour cream)
- Salt and pepper as needed
In a large stock pot melt butter. Add onion and garlic and stir until butter is melted and onions become clear. Add corn, potatoes, and lentils, broth and water. Add marjoram, salt, and pepper. Turn to low heat when bubbling and add Cream or Sour Cream. Continue to cook for 60 minutes on low stirring occasionally. Serves approximately 4
