Curry. That delicious dish that can be intimidating for the beginner cook. But i made this for the first time and will keep it up now that i know how easy it is! It’s so delicious and creamy. Yum! Vegetarian Curry (delicious and creamy)



Vegetarian Curry

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Vegetarian Curry


  • 1 Onion
  • 3 Cloves Garlic
  • 1 TBS Fresh Ginger
  • 2 Cups Green Beans
  • 1 Cup Broccoli
  • 1 Carrot Optional
  • 1 Tsp Curry Powder
  • 1 Tsp Cumin
  • 1 Tsp Turmeric
  • Salt to taste
  • 2 Cups Full Fat Coconut Milk
  • 1 TBS Coconut Oil
  • 4 Cups Cooked Rice


  1. In a food processor blend onion, garlic, and ginger.
  2. Heat coconut oil, and add blended onions, garlic, and ginger.
  3. Once browned slightly, add vegetables, spices, and coconut milk.
  4. Cook until vegetables are soft.
  5. Serve over cooked rice.
  6. Enjoy!

Please correct recipe to show ginger in the ingredients list as garlic appears twice and it’s not until you read the directions that you see it should have ginger in it also.
