Curry. That delicious dish that can be intimidating for the beginner cook. But i made this for the first time and will keep it up now that i know how easy it is! It’s so delicious and creamy. Yum!
- 1 Onion
- 3 Cloves Garlic
- 1 TBS Fresh Ginger
- 2 Cups Green Beans
- 1 Cup Broccoli
- 1 Carrot Optional
- 1 Tsp Curry Powder
- 1 Tsp Cumin
- 1 Tsp Turmeric
- Salt to taste
- 2 Cups Full Fat Coconut Milk
- 1 TBS Coconut Oil
- 4 Cups Cooked Rice
- In a food processor blend onion, garlic, and ginger.
- Heat coconut oil, and add blended onions, garlic, and ginger.
- Once browned slightly, add vegetables, spices, and coconut milk.
- Cook until vegetables are soft.
- Serve over cooked rice.
